Nothing Like a Warm Bowl of Soup on a Cold Evening


A chill is in the air. There is nothing like a warm bowl of soup to help you recover from a long, cold day. These recipes will have you calling, “Soup’s on!” before you know it. 

Black Bean Soup 
In a blender place one can (16 oz.) of black beans with its liquid and blend until smooth. In a saucepan, heat one tablespoon of oil. Add one chopped onion and one teaspoon minced garlic and cook until tender. Add the bean mixture, another can of black beans, and one jar (16 oz.) of salsa. Bring to a boil. Add 1/4 cup lime juice, one teaspoon of cumin, a pinch of crushed red pepper, and salt and pepper to taste. Cover and cook on low for 30 minutes, stirring occasionally. If soup seems too thick, thin with some chicken broth. Serve topped with sour cream and chopped cilantro leaves.  

Easy Corn Chowder 
In a large saucepan, sauté four diced slices of bacon and one chopped onion until the onions are tender. Add one can (14.75 oz) cream style corn, three peeled and cubed potatoes, one can (10.75 oz) condensed cream of mushroom soup, and three cups of milk. Add salt and pepper to taste. Bring to a boil and then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.  

Easiest Chili 
In a large saucepan, brown one pound of ground beef. Add one can (16 oz) chili beans with the liquid, one can (14.5 oz) peeled and diced tomatoes with their juice, one chopped onion, and 1/4 cup chopped green bell pepper. Add 2 tablespoons chili powder, one minced garlic clove, and one teaspoon hot pepper sauce. Reduce heat, cover and simmer for 30 minutes.
